Quarantine Kitchen: Blueberry Buckle

¾ cup sugar
¼ cup softened butter
1 egg
Ingredients:

  • ½ cup milk or water
  • 2 cups flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 cups blueberries

Topping:

  • ½ cup sugar
  • ½ tsp salt
  • ⅓ cup flour
  • ¼ cup softened butter

Directions:

  • Beat the sugar and butter together. Add egg and beat. Add the rest of the ingredients, except the blueberries and mix until smooth. Fold in the blueberries.
  • Spray a 9" square pan with PAM and add the batter.
  • Mix all the topping ingredients together until crumbly and sprinkle the topping over the batter.
  • Bake at 375° for about 40–45 minutes.
